The young Turks of British cooking

From the Wall Street Journal: "If we're speaking in clichés, then nothing is more American than apple pie, or as British as roast beef. It is appropriate then that a new movement of young British chefs should herald its arrival with a beef dish. Even if it is served completely raw—and mixed with uncooked oysters and chickweed."
